There are many Indian curries that use seafood. One that made it onto the Taste Atlas list is Chingri Malai curry, a popular Bengali dish. The guide’s official website describes the key ingredients of this flavoursome shrimp curry as follows: “Made from a base of coconut milk and shrimp, seasoned with garam masala spices and fried in ghee or mustard oil with onions, hot chili peppers, garlic-ginger paste and turmeric. Optionally, red chilli powder, cinnamon, sugar and cardamom can be added to the curry for extra flavour. The dish is cooked until the gravy is thick and creamy.”
